Orange Creamsicle Mug Cake

Spring is finally here, which means I'm pulling out all the citrus desserts! This orange creamsicle mug cake is everything spring entails: light and spongey, with a sweet citrus taste and tangy icing.


If you aren't familiar with the concept of a mug cake, it's a dessert for one in, you guessed it, a mug! This is perfect if you are living alone or wanting to cook something just for yourself. You can also, of course, have each member of the family make their own mug cake, an easy way for each person to pick their favorite type.

Another benefit of mug cakes is that they're super fast! Because they cook for only a minute in the microwave and you mix everything inside the mug, it takes under 10-15 minutes with little clean-up.

This recipe is definitely one of my favorite mug cakes I've tried. It's fluffy and sweet, and the tangy orange cream cheese icing compliments it perfectly. You can also top it with an orange marmalade if you would prefer!

If you're looking to serve it on a plate, as I did, you can cool the cake upside down. Simply lift off the mug when cool and the cake should slide out easily.
